Victoria’s passion for how food works in the body started with a 6th grade science project on the human digestive system – ever since then she was hooked.  With a desire for educating people on how nutritious foods impact health, happiness and life-long vitality, Victoria founded her consulting practice in 2004.  As a graduate of the Roy H. Park School of Communications at Ithaca College in Ithaca, New York and Loyola University Chicago’s Food & Nutrition Program, Victoria combines both of her loves – communications and nutrition, into her daily work.             

As the mother of two small children, she is proud to be a nutrition consultant for www.mom-RD.com, which links moms with registered dietitians.  She delights in connecting with mothers all over the country about what to feed their families, making over their recipes and providing ways to make healthier food choices everyday. 

Food and nutrition writing is a large part of her consulting business. Victoria’s articles have appeared in several local and national publications including: Restaurants and Institutions, Chicago magazine, SELF, Delicious Living, Today’s Dietitian, Today’s Diet & Nutrition, Bariatric Times, Communicating Food for Health, Journal of the American Dietetic Association, EatingWell, Pilates Style, Women’s Health, Chicago Tribune and IDEA Fitness Journal.

Victoria has been interviewed as a nutrition expert by CBS-Live Radio, WGN-TV, ABC World News Tonight, Chicago Tribune, Chicago Sun-Times, Chicago Parenting magazine, WebMD, and Oxygen magazine. 

Victoria speaks to diverse audiences with the hope of revolutionizing the way people think about food and its effects on their health.  Her enthusiastic speaking style has captivated groups from the Chicago Chamber of Commerce, American Medical Association, Deloitte., Options Clearing Corporation, Bank One, Foot, Cone & Belding, The Harley Davison Company, and Career Builder.

Victoria is an active member of the American Dietetic Association, Food and Culinary Professionals and served as Chair (2006-2007) of the Nutrition Entrepreneurs, A Dietetic Practice Group of the American Dietetic Association. 

Mission
To teach people how to eat for health and longevity by providing high quality nutrition care and services to clients and the community. From writing to speaking to counseling, every experience is an opportunity to educate consumers about the latest scientific evidence and how to best apply it in real life.
